[Sca-cooks] eggplant bitterness was Cooking Turnips - OOP

This is one of my favorite caponata recipes that I use for dislikers of eggplant:

1 onion, thinly sliced
1 red bell pepper, deveined and chopped
4 garlic cloves: 3 thinly sliced, and 1 finely chopped 3-4 tablespoons extra virgin olive oil
Salt to taste
5 ripe tomatoes
1/4 jalapeno chile, seeded and minced
Pinch each, cumin, turmeric, ginger, saffron threads  1/4 bulb fennel, diced
sugar to taste
1 or 2 tablespoons brined capers, drained
About 10 green or black Mediterranean olives, pitted and cut into halves
2 tablespoons raisins
Juice of 1 lemon, or to taste
1 tablespoon chopped fresh marjoram and/or parsley

Lightly saute the onion, peppers and sliced garlic in the olive oil until they soften; sprinkle with salt as they cook. Add the tomatoes, jalapeno, cumin, turmeric, ginger, saffron, fennel and sugar; cook for 10 minutes or so, until thickened.

Stir in the capers, olives, raisins and lemon juice. Adjust seasoning with sugar, lemon juice and spices.

Stir in the marjoram and/or parsley and the reserved chopped garlic, taste again for seasoning and set aside to cool.
