[Sca-cooks] Mad Bakers

Gytha, MOST bakers(professional/ by trade) start their bakes at midnight or not too long after that. At Panera, where I used to bake, we started at 10:00 p.m and went the whole night, until around 7 or 8 in the morning. Now those are some Mad Bakers!!!
