[Sca-cooks] Provolone...

Provolone is apparently a Southern Italian (some sources specify
Lombardy) cow's milk cheese, traditionally age in pear shaped balls,
and "string-y" (a bit like mozzarella in texture).

Does it have much of a history, or is it a comparatively recent cheese?

I bought some because it was reasonably priced and then i noticed it
was NOT on my list of period cheeses...
