Get hold of me next week after Tuesday and I will dig around
for more dairy literature... there are instructions for dairy and white
meats. You can start with the chapter in Markham's The English
Housewife. It's entitled "Of dairies, butter, cheese, and all the
necessary things belonging to that office." pp. 166-179 in the Michael
Best edited edition.
