In some versions of humoral theory, cheese is thought to "close up"
the chest and abdomen, prior to proper digestion.

Sweets such as sugared nuts open it up for the beginning of a meal,
hence their position there in many menus.

Spices are for the heat to speed it all along.

Think of it as opening the gas tank of your car, filling it up,
closing it and turning the key...
