Master Huen lists provolone as a medieval cheese, but I didn't see any
documentation on his web site.
The Oxford Companion to Food has an article on provolone, unfortunately, I
don't have one. Root provides nothing.
According to Chef Walter http://www.chefwalter.com/gstronomy.htm ,
caciocavallo is a similar cheese originating in the Kingdom of the Two
Sicilies.
Not a whole lot readily available. That piques my curiosity.
