It, in turn, is a variant of one of Emeril's savory cheesecakes and I've
used this basic pattern to create several variants myself. I prefer green
onions (or, yes, chives) in place of the parsley, and usually use an
apple-smoked Gouda from a local market. Works just as well with crawfish or
lobster as it does with crab. Ignore the comments from reviewers about
using artificial or canned crab <shudder> and spring for some good Dungeness
or King -- you need a rich meat that can stand up to the other strong
flavors involved.
