One gentle comment, please.

Delights of Cathay is run by a very kind SCAdian lady
from the Barony-Marche of the Debatable Lands in the
Kingdom of AEthelmearc, Lady Ysabell Graver.

I believe she is *trying* to do period Chinese
cuisine, but doesn't have a lot of research yet and is
obviously preparing what most folks expect from
takeout Asian food (i.e. eggrolls, General Tso's,
etc.). 

She is very accomodating of folks' food allergies and
preferences, since she herself has Celiac's and can't
have wheat (I think I got that right...).

I'm not saying that I know authoritatively that her
procedures are perfect, or that she follows all the
rules. I just know that she's a very dear lady and a
longtime SCAdian, and that she is not just some random
local Chinese eatery owner from New Castle.

Just my two cents, good gentles. :)
