My mother was wont to freezing the Thanksgiving carcass (bones) to make 
soup later. One year I was a good lad, defrosted the upright freezer and 
cleaned it. I found three or four skeletons wrapped in foil in the back 
of one shelf like some icy catacomb. And that was the year she had been 
laid up and had not cooked a bird for Thanksgiving, so at least one bird 
was 4 or 5 years old.

The two times I've frozen the Thankgiving carcass, it only lasted until 
it joined it's Christmas cousin in the stock pot.
