[Sca-cooks] (OT) Atkins cheesecake

To add to this:

I do my low-carb cheesecakes in muffin-size paper cases (with no base), and
easily storable in single serving sizes.

Another wonderful low-carb alternative is Choc-Almond Pancakes:

Makes 3 small pancakes:

All measures are a bit approx...

1 egg
2T ground almonds
3/4T cocoa
3/4T splenda
1 and a bit T cream
1t olive oil

whisk until smooth, if a bit dry add a little water, if a bit runny, a
little more ground almonds.

Make as normal pancakes.

I think this works out around 5-6 g carb. - all depends on the individual
brands used.

If you make these plain pancakes (no cocoa), it's about 1 g carb. less.
These are GREAT with lemon!
