My advice is rather biassed. My dad was a tad odd, so he taught us lots of
survival skills. If you were hungry, you went out in the yard and killed
dinner. I _HATED_ plucking, so as a rule I skin them. Since you're sticking
them inside another bird anyway, it makes sense to just stick them in there
that way.
How many layers of bird did you want to go? There may not be room for
grains/veggies inside. If you put a small bit of grain/veggie around each
layer of bird, that would give it something to soak up the cooking juices,
and be very interesting!
