I think porringers are a later thing, but I'm not sure of the definition of 
one...

Believe it or not, the best book I've seen on period table settings is 
actually Fabulous Feasts by Madeline Pelner Cosman.  The recipes are horrendous, but 
the first two/thirds of the book is about table settings and ceremony, with 
lots of pictures and footnotes.
