[Sca-cooks] Sapa For Sale/Catering at the War

Mistress Hauviette d'Anjou has announced that she is taking
orders for Sapa which is reduced wine must. The last time she made
it, she took orders and sold all but 1 bottle to SCA cooks at the Cook's
Meeting at Pennsic.
She has recently received another request to do the same.
The wine must is reduced by 2/3'rds producing a sweet syrup that is
called "Sapa"
in later period Italy and was also called "defrutum" by the Romans and
is used to
enhance many period dishes such as Platina's Red Mustard as well as
sweetening
sauces in early period dishes.

The cost of a 750ml bottle will be $24 USD. Corked and bottled, it will
keep unrefridgerated
until opened and then should be kept cold for best results. She's had an
unopened bottle
in her cellar for 3 years. Since it is highly concentrated, one bottle
goes a long way.

If anyone is interested, She will be marking Pennsic as the delivery
time for those
outside of the Midrealm, earlier for those within it, and will be taking
orders starting today.
As soon as she has 12 orders to create a batch she will be preparing it.

She also will be  offering her services as a Personal Chef and Caterer
at Pennsic. She's
available to prepare custom period dinner parties on site (some cooking
arrangements will be necessary).

She will design and prepare period menus, and will shop for all of the
ingredients, cook on site (using the clients cooking arrangements) and
can also provide servers and
musicians upon request.
