Red cabbage turns blue during the cooking, then turns red again when you add
the vinegar to it. If you used the cabbage recipe Liadan prepared for her
feast a year or so back and skimmed off some of the liquid before adding the
vinegar, then you might have a blue dye.

The problem with either of these methods is acidic food will cause the juice
to revert to red.
