[Sca-cooks] OOP - slow cookers-Corned Beef Stew

This is the first recipe I came up with based on one that came with my
original crockpot 20 years ago:

Corned Beef Stew

2 1/2 to 3 lbs. corned beef, cut into 1 1/2" cubes
6 small white or red potatoes, quartered
1 lb. pkg. peeled baby carrots
2 large stalks celery, sliced 1/2 " thick
1 package beefy-onion soup mix or 2 cups beef stock
1/4 cup brown sugar
1/4 cup vinegar
2 to 4 cups water
1tsp. pickling spice or pack of spice from the corned beef package
1/2 tsp. fresh ground black pepper
1 large onion sliced into rings

Place corned beef cubes in the bottom of a large crock pot. Add the
potatoes, carrots, celery. Sprinkle over the soup mix, seasonings and brown
sugar. Pour over these the vinegar (and beef stock if using instead). Pour
in water, one cup at a time only until it just comes up to the top of the
vegetables. Seperate the onion slices into rings and lay on top of the other
ingredients. Cover the crock pot and cook all day or more. Serve with crusty
bread. Serves 6.
