I have to throw my favorite in here.
Melt 1 Tbsp. butter in a metal 9" X 13" X 2" pan. Tilt the pan so the bottom is lightly covered with butter. Sprinkle with brown sugar (How much is up to you.) Sprinkle drained, crushed pineapple over the brown sugar. Remove the crusts from bread (white or brown - thick sliced white aka Texas Toast works great) and make a layer of bread over the pineapple. Beat six eggs and add 1/4 cup milk or 1/2 and 1/2. Pour over bread. Cover with foil and refrigerate. The next morning, preheat oven to 350, remove foil and bake until lightly brown and the egg is set - approx. 45 to 55 minutes. Cut into serving sized pieces and turn over onto the dish. Voila! Pineapple Upside Down French Toast! You can sub any kind of fruit or 2 cans of fruit pie filling for the pineapple. If you make this dish the morning you plan to serve it you can drench the bread in the egg batter and place it over the fruit. Then pour over any remaining egg batter. You can also add cinnamon, ginger or allspice to the batter depending on what you like. One pan usually serves 6 to 8 people.
