The sandalwood used in the essential oils is yellow sandalwood
(Santalum album) and should not be used in food for possible health
reasons.  Red sandalwood (Pterocarpus santalinus) is food safe, but is
really only useful as a colorant since it only has a flavor in large
quantities, and that flavor is "sawdust".
