I believe it was Einhard who wrote about Charlemagne preferring roast meat
while his doctors wanted him to eat boiled beef as being better for his
health.

This dish might be a compromise to provide a better tasting but "healthier"
beef.  Then again, the patrom may have just liked pot roast.
