I've done the Vidallia Onion Salad in the coals of the fire...it worked
AMAZINGLY well. It's a perfect compliment to pork as it tastes a little like
apples.
Be warned...make sure you bring your spices with you and don't rely on other
people's idea of spices.
I asked if our cook was bringing spices, and was told oh yes, you don't need
to
bother, we have a ton of spices.
Salt, pepper, garlic powder, onion salt, steak spice, and a couple of
others...I ended up having to improvise with a package of apple and cinnamon
instant quaker oatmeal.
Didn't taste too bad, mind you...
