It's a tuber, rather crunchy and succulent, like jicama or water 
chestnuts, generally eaten raw, and bears little resemblance to either 
globe artichokes or cardoons. I'm not sure to what extent the plants 
are related.

Interesting. And then it's my understanding that most of the 
restaurants in the Jewish quarter are staffed by Arabs...
