Amanda, you can use beef smoked sausage, too.  I've even used a mixture of leftover meats - chicken pieces, hotdogs, turkey, ham. It's all good! If the sauerkraut scares someone, it is much milder if you rinse it first.  But I like the flavor, so I just pour it over, juice and all.
