If you get good flavored sauerkraut, but have someone not used to the robust flavor, you can drain and rinse the kraut before putting it in the casserole.  The flavor is still there, just milder.  Like my Cajun Aunt cuts the seasonings in her Gumbo recipe for the "Northerner's."
