I asked Thomas about it, since he uses this kind of wine quite a lot, and
this is what he just sent me.

Greco was a sweet, white wine. It was made using late-harvest grapes of the
Greco variety. So, you want a sweet white wine with honey overtones.

Ideally, you want the Italian wine called Greco di Bianca. This is made in
the same place and manner as it was made back then. Although the Greco di
Tufo is widely available, and is made from the Greco grapes, it is a dry
white that has none of the character of the Greco di Bianca.

An excellent substitute is a white Malvasia from Catalunya/Spain, or a
Malvasia bianca from Italy. These are also late harvest wines, and I
understand very similar to the Greco di Bianca.

A good substitute, if you can't get the Greco or the Malvasia, is a late
harvest Vidal.
