You can google the terms

mint sca recipes

and turn up a lot of recipes off the web that use mint
and are SCA oriented in some way.

For original recipes, try taking a look at the various
Elizabethan recipes books. I don't have a list at the moment,
although this is on the list of things to do later this year. My
mint crop usually does very well.
