Here is my suggestion:

Carve all but one of the chickens in the kitchen.  Process the remaining whole chicken to the High table, and carve there.  Once the high table has had theirs carved, get the carver to clap their hands, and then have the servers bring the other pre-carved chickens out of the kitchen to serve to the populace.
