[Sca-cooks] pickled Eggs

ok, as an experiment i tried a VERY basic pickled egg.

in addition to the "tea eggs" that i took to Death Of an Apothacary (D.O.A.)
i took some pickled eggs..... they were extremely well recieved!

i simply hard boiled a few eggs........ peeled them.... and packed them in a
heated mason jar (the authentic thing to do would be pack them in a ceramic
pot, but i HAD a mason jar)
then i poured Balsamic Viniger that had been heated to a strong simmer over
them. (yes, the recipe calls for herbs, i was in a hurry! and i am allergic
to a lot, so i used plain viniger)
sealed the jar and ran out the door for the event.

the eggs turned black! (well really really dark)
but as soon as you bit through the surface they were pristine white!
they ended up with a "skin" type effect, probably from the viniger...

they looked really cool, and tasted good too.
