Selene,

The worry I have for you is if you do pull out all the stops and do
something wonderful with half the money, they'll expect it ALL THE TIME, and
then later your budget may be cut again.

I would just give a smaller amount of food in the feast. Served with the
same finish, same style, but just less expensive food/smaller amounts of the
less expensive food - and LOTS of cheap and filling carbohydrates for those
who can (trying to remember whether there is any blancmange type recipes
from the late 16th century) - pottage is also a great filler.

When people ask (and they will) just tell them about the reduced budget.
This will then get back as complaints to the organisers, who may then have
to give you back the budget next time.

Don't let them muck you around. It's not worth the struggle.
