I too have faith in you Selene,

Is there any chance that the event steward when they announced the food budget of $1,500 had a particular number of attendees in mind?  I am trying to work from the assumption that the steward isn't deliberately trying to make your life miserable, but that maybe there just needs to be a bit of clarification between you.

If the clarification is that your assumption is correct, present them with two menus; one which is calculated to cost $5 a head (or whatever) - say soup, buttered worts, bread, cretonne of peas, a potage, apple puffs, jam tarts with one soteltie.

Then give them another menu using your original understanding of the budget would be, with all the glorious food you have planned.

Let them choose.  Maybe you can tell 'em that they can have dishes from menu b added to menu a for 80c a head per dish.
