I don't know.
De Nola has a short chapter on "how foods should be put on the table". He
then discusses "the roast", "the boiled", "the pottage", etc. The word I've
translated as "foods" is "viandas". "Vianda" can also mean a meal served at
a table. I have not found any dictionary, either historic or modern, which
defines it as a course.
If you find out, please share the information.
