[Sca-cooks] Kind of an odd (dumb) question

I haven't made rollmops but I have made lots and lots of pickled herring.  
We used to dip them out of the river when they ran (yeah, I know, against 
the law).  I used to de-bone them even though you don't have to then slice 
them.  I would put up usually around 10 gallons plain and 10 gallons in sour 
cream pickle.  Very simple process.  When they were ready we usually had a 
party at some new persons house (it always had to be a new person because 
the first quart was always used for "christening" someone).  We never cooked 
them but I suppose you could.   Just don't know why.
