I brine my turkey, put it in a 500 degree oven for 1/2 hour and reduce
temperature to 350.
I use a poulder probe thermometer.
No problems, moist and tasty every time.

They also have a method of Butterflying a turky which speeds the cooking
time immendsely (though I have not done that)
