So tell me more about larding turkeys? I usually stuff butter under the
skin, which I guess works in a similar way, but the skin doesn't look as
pretty as it could

What I do, with chickens also is mince garlic, mushrooms and very little
Vidalia onions and mix with butter and form a layer under skin.  then with
hands form over flesh to get back to original shape.  Usually a full pound
of button mushrooms.
