The most recent* issue of Cook's Illustrated has a recipe for strudel that 
uses phyllo. It looks interesting, and the developer's intention was to 
come up with something sufficiently strudel-like that didn't use pie dough 
and also didn't require an entire day of stretching strudel dough over a 
table.
