Dear Margaret,
 
Just my two franc's worth:
If you want to gift them with "Granpa's Baking Recipes", copy them just as they are.  If you want to gift them with "Margaret's version of Granpa's Baking Recipes" then categorize them, and add your instructions, being clear that they are YOUR instructions.
When I share recipes with my family, that's what I do, either tell 'em it's Aunt Frannie's recipe, or my version of Aunt Frannie's recipe.
