All commercial mustards would still fall within your guidelines.

Let's avoid false dichotomies. I've taught kindergarteners to make and 
like mustard sauces from period, no problem. Many of them also like 
Sauce for pigeons (and most of the 'I'm a squire so I don't eat wierd 
food but I want food that singes my tongue off' crowd like it too.)
