I had an interesting internal debate about which cookie recipes I should
post for my recipe exchange offering. I've really enjoyed making springerle
cookies lately, but that is simply the House on the Hill recipe. It's been
really easy to work with and produces some wonderful cookies... You can
find it at http://www.houseonthehill.net/recipes.php

So instead of posting that recipe, I dug through my recipe box and pulled
out some of the "heritage" recipes. These are cookies that we only make at
Christmastime and at least one of the recipes is over 100 years old (not
medieval by any means, but still old). And they are some of my favorite
cookies. I've been tempted to make them during the rest of the year, but
I'm afraid that some of the "specialness" of the cookies will rub off if I
make them more often.

(Also, in honor of it being the 3rd, I'm posting 3 recipes, because I want
to.)

1. Grandma Egglesman's "S" cookies. (Grandma Egglesman is my Great, Great,
Great Grandmother)

1/4 pound butter
5 egg yolks beaten
3/4 pound flour
1/4 pound sugar
1 teaspoon vanilla

Rub Butter and flour together. Add beaten egg yolks, sugar, and vanilla.
Roll out to 1/4 inch thick. Cut into strips and form into an "S" shape.
Grease and flour pan. Bake in moderate oven until light brown.

2. Grandma White's Brown Sugar Ice Box Cookies (my Great Great Grandmother)

2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter or margarine (or 1 stick of each)
1 cup dark brown sugar
1 teaspoon vanilla
1 egg, slightly beaten
1/2 cup chopped pecans or walnuts

Sift dry ingredients together. In separate bowl, cream butter and sugar,
add egg and vanilla. Then mix in dry ingredients. (Dough will be stiff)
Shape into logs about 2 inches around. Wrap in wax paper. Chill about 2
hours. Slice 1/4 inch thick and bake at 350 degrees F until light brown.
Makes 4 1/2 dozen.

3. Great Grandma Flo's No Bake Chocolate Cookies

2 cups sugar
4 level Tablespoons cocoa
1/2 cup milk
1 stick butter melted
1 cup flaked coconut
3 cups instant or quick oatmeal
1 teaspoon vanilla
1/2 cup nuts (optional)
Powdered sugar

In saucepan cook and stir for 1 minute the sugar, cocoa and milk. Remove
from heat and stir in butter. Then add coconut, oatmeal, vanilla and nuts.
Drop into small paper cups or on a lightly greased cookie sheet. Roll into
balls using powdered sugar to keep from sticking to hands. Refridgerate.

Hope you enjoy them!
