First, peel the fruit.  Then cut in half lengthwise and scoop out the seeds.  Raw, fruit can be served 
thinly sliced or cubed in salads (like Jicama)
sprinkled with sugar (like fresh strawberries)
 or added to salsa.  
The most common way it's sold, however, is made into a jelly, just replace the fruit in your favorite apple jelly recipe with the Prickly Pear.  
It also makes an interesting salad dressing:  
Puree the raw fruit, or force through a seive.  To 1/2 cup puree, add 1/3 cup vegetable oil,  4 Tbls. Red Wine Vinegar, salt and pepper to taste.
