     Actually, that's quince paste or marmalade.  There are several recipes 
for this in 'Book of Marmalade', which is currently in-print and available.  I 
believe that it's also discussed in 'Sugar Plums and Sherbet', but don't have 
a copy to hand right now, although it's supposed to be reissed Real Soon Now 
in paper.
