Del Elston is the author of the one of Pyes of Pares.
There is a regular monthly section called Historic Cookery.  In the January
issue is the fritter recipe authored by Ray Hatley, and the February issue
has an article abour oranges in the middle ages, authored by Kirrily Robert
with two recipes, one for a bitter orange substitute, and one for chicken in
orange sauce plus a little boxed subsection about Le Menager de Paris
