Ha! I can actually answer this one. When my sister graduated from
college a few years back, we went down to SoCal for the ceremony, and
she and her boyfriend took us to this place. I ended up with a little
cookbook from it, called, oddly enough, _The California Pizza Kitchen
Cookbook_. It's by Larry Flax & Rick Rosenfield. The salad recipe is
on page 85.
Romaine-Watercress Salad with Balsamic-Basil Vinaigrette
--makes 4 entree-sized servings, or 8 appetizer-sized servings
Vinaigrette:
6 to 8 large, fresh basil leaves
6 T balsamic vinegar
1/4 pound Gorogonzola cheese, crumbled
3/4 c. pure, mild-flavored olive oil
Romaine-Watercress Salad
1 head (1.5 lbs) romaine lettuce, cleaned, cored, and cut into 1-inch,
bite-sized squares
1 bunch watercress, cleaned and cut into bite-sized lengths
8 oz Gorgonzola cheese, crumbled
2 c. walnuts (shelled, halves)
To make the dressing: Process all ingreds. except oil using a hand-held
propeller-blade type mixer (or use a whisk in a small bowl). Slowly
blend in oil; set aside in fridge.
To make the salad: Combine the greens in a large mixing bowl. Add
dressing and toss to coat all leaves. Transfer the dressed greens to
chilled serving plates. Top each serving with equal amounts of crumbled
Gorgonzola and walnuts.
