[Sca-cooks] OOP - Lemon-Thyme Crisps Recipe

I think Jadwiga mentioned that someone on this list was looking for this recipe; if so, enjoy :).

Lemon-Thyme Crisps

3 1/4 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
4 tsp. finely chopped lemon thyme
2 sticks butter, softened
1 1/2 c. sugar
2 1/2 Tbsp. lemon zest
1 large egg
3 Tbsp. lemon juice
1 Tbsp. grated fresh ginger
confectioner's sugar

Sift together flour, baking soda, and salt.  Stir in thyme.  In large mixing bowl, cream butter, sugar, and zest until fluffy.  Add egg; mix well.  Stir in lemon juice and ginger.  Add flour, mixing until just combined.

Halve dough and place on separated sheets of wax paper.  Roll the wax paper tightly around the dough, shaping into 14" x 1 1/2" logs.  Wrap logs in foil and freeze, 20 minutes to 3 weeks.

Preheat oven to 350 F.  Cut logs into 1/4" slices, and cut each slice diagonally.  Arrange 1" apart on parchment-lined baking sheets.  Bake for 12 minutes, switching shelves halfway through baking.  Transfer to cooling racks immediately after removing from oven.  Dust with confectioner's sugar.

Yield: 120 pcs.
