if bacon is blowing the budget, sometimes you can get really good deals on 
ham.  I am using sliced ham for a cold breakfast (for 60-100 and that's as 
close as they can give me!) because with a good deal and a good knife, you 
have breakfast meat that you don't have to cook.

and.... people might tend to not load their plate with ham like they would 
bacon.

ahhhh.. the psychology of food service. 8)
