[Sca-cooks] RE: Pigs Heads

I make Brunswick Stew...and it's reputed to be pretty good...but it doesn't contain any part of a pig...the meat is chicken.  I do know that traditionally, in the South, at least, they used whatever they happened to have...squirrel, rabbit, etc.  The recipe I use comes from Chowning's Tavern in Williamsburg, VA.
