What my Granny used to do with them was boil the meat off than add
vegetables, spices & vinegar to make a dish called Brunswick Stew.  She did
keep out the tongue though & cook that separate in a bunch of Turnip Greens.
Boy! was I surprised when after eating three of the beat tasting pieces of
ham I had ever had she said "Stop eating all of them tongues & leave some of
them for other people!"
