OK, I have bad news on the Italian front, out of all the manuscripts I can track down, photocopy, get my hands on online, find in bibliographies there are only three translated into english.

1) neapolitan recipe collection - scully, essentially a martino late 14 - early 15th 

2) The anonymous venetian cookbook, 14th C Italian, online (still a work in progress)

3) The libro novo of Cristoforo Messibugo, translated by Master Basilius Phocus of the midrealm and coming soon to a website near you (he promises).
