I have brought a pre made item to these pot-lucks before. Complicated by the fact that since I was flying in my space was limited. One year I made some of the pine-nut candy. I'm sure here are other things that would work as well.

 

In fact, with everything else going on at Pennsic and everything I'm usually trying to do, it often seems to work better when I do make and bring something from home rather than making something on site.
