[Sca-cooks] coconut milk and rice milk

I don't recall coming across any references to rice milk in the English 
and French sources I've looked at, and certainly didn't see coconut at 
all.  Almond milk shows up in an amazing number of recipes though, and 
it thickens nicely when cooked.  Would it work?
