[Sca-cooks] coconut milk and rice milk

Certainly not comprehensive, but a search for either of these turns up 
nothing in the Florilegium in the way of period recipes or evidence for 
use in period in our regions of study. I think the idea of using almond 
milk, if it fits your other needs, is a good one.
