Yep.  That would be unsmoked kippers, and should work fine.  We'll have 
the smoker fired up on Friday night if you want to hot smoke them for a 
bit and make pseudo-kippers.

You could also brine in wine instead of vinegar if the vinegar flavor is 
what you're trying to avoid.
