Cognac!  That sounds much more interesting than the vodka in Comptesse
Albra's recipe.  Well, next time.

I have a wonderfully cultural-biased book called "Classic Scandinavian
Cooking" by Nika Hazelton that includes a recipe for Graved Lax:

7-8 pounds fresh salmon in one piece, with bones in
2/3 cup salt
1/2 cup sugar
1 tablespoon whole white pepper, crushed
1 teaspoon whole allspice, crushed
6 tablespoons Cognac
2 large bunches of dill

I don't have time to type in the rest of the instructions, but will when I
get back from  Gulf Wars if you like, her opinion on how things "must be
done or the dish will be a failure" are great.
Your new taste treat sounds interesting, let us know how it comes out -
